Oldbones, I would definitely vote for option 3 as the way forward. I certainly wouldn’t start hacking into the side of the guitar (even if you hired a professional to do so) and bits of wire hanging out of the sound hole will be much more of a longer term hassle and annoyance factor than string slac...

Mel, the neck on a mandolin is tiny and I've known lots of guitarists who have struggled with cramming their fingers into such unfeasibly small spaces. You might always look at another option by amending your challenge slightly from "mandolin" to "mandolin family". Something like...
